What the Evidence Supports
PFAS chemicals have been used in nonstick cookware since the 1950s, and the National Institute of Environmental Health Sciences links exposure to hormone disruption, immune suppression, reproductive harm, and certain cancers — most people in the U.S. now have detectable PFAS in their blood.
The two most notorious PFAS chemicals, PFOA and PFOS, were phased out of U.S. nonstick manufacturing starting in 2006. But that phase-out only covered those two specific chemicals out of a class of over 14,000 — which is why Consumer Reports stopped trusting “PFOA-free” labeling after testing found a pan marketed that way still contained PFOA.
What Gets Misunderstood
Most “ceramic” nonstick cookware isn’t solid ceramic at all — it’s usually an aluminum or stainless pan with a thin sol-gel coating sprayed on top, and that coating typically lasts only 2 to 4 years before it degrades, regardless of brand. Once it chips or loses its nonstick performance, the metal underneath is exposed, which is arguably a worse outcome than never having a coating in the first place.
“PFOA-free” and “PFAS-free” also get used interchangeably in marketing when they’re not the same claim — PFOA-free tells you about one chemical from 2006; it tells you nothing about the dozens of other fluorinated compounds that could still be present.
What Is Worth Your Money
Stainless steel, cast iron, and carbon steel are the only genuinely permanent, coating-free options — they need a bit more oil and technique, but they never degrade and never need replacing. If you want the convenience of nonstick for eggs or fish, look specifically for a pan that discloses both “PTFE-free” and “PFAS-free” (not just PFOA-free) and publishes independent third-party lab testing — a brand willing to show you the results is a meaningfully different signal than one just using the word “clean.”
Treat any ceramic-coated pan as a wear item with a 2-4 year lifespan, not a permanent purchase, and replace it the moment the surface chips or loses its release.
